Who Knew Pancakes could be so Sneaky!

Deluxe Pancakes or Waffle Recipe

  • 2 cups All-purpose Flour
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 3 tbsp Sugar
  • 4 Eggs
  • 1 1/4 cups of Milk
  • 1/2 cups of coconut oil (or olive oil or melted butter)

Instructions:

In a bowl mix all the dry ingredients. (Flour, Baking Powder, Salt, and Sugar)

In the center of the dry ingredients crack the 4 eggs, pour the milk onto the eggs, and then the coconut oil. 

Whisk all the ingredients until smooth. 

Pour 1/3 cup onto a lightly greased griddle. 

Once the top of the pancakes starts to bubble, flip until lightly brown and serve with your choice of toppings like fresh fruit, maple syrup, compoté, nut butter, etc.

The Sneaky Vegetable...

I love sneaking vegetables into my children's meals. Often I will squeeze a Caribbean Pumpkin Pouch into this recipe and add a little extra cinnamon. 
If you have another vegetable mash, like pumpkin or sweet potato you can mix a 1/2 cup into this recipe. It's delicious and they won't know what's making them taste so good!
